Expert chefs at ALDI have put together three amazing recipes for gorgeous sides, including Tomato and Chilli Jam, Persian Style Feta, Pomegranate and Walnut Salad, and West Cork Buffalo Mozzarella Pearls with Irish Rainbow Tomatoes and Shaved Courgette. All three are healthy, easy to prepare and made using ingredients you can find in your local ALDI at everyday low prices!

Tomato and Chilli Jam

Ingredients 

• 1kg ripe Nature’s Pick Plum Tomatoes
• 4 large thumbs of Nature’s Pick Ginger
• 1 ½ tbsps. of The Deli Cider Vinegar
• 8 Nature’s Pick Mixed Chillies, chopped in small chunks
• 8 cloves Nature’s Pick Garlic, finely sliced
• 600g The Pantry Caster Sugar
• 200ml The Deli Red Wine Vinegar

Method

1. Add half of the tomatoes into a blender with the peeled ginger and the fish sauce. Blitz until roughly smooth.
2. Dice the remaining tomatoes and add to the chilli, garlic, sugar, and red wine vinegar.
3. Add all together and bring to the boil until all sugar is incorporated. Leave to simmer for 20 minutes. Remove from heat and leave to cool before adding to a clean, airtight jar. 

Persian Style Feta, Pomegranate and Walnut Salad

Ingredients 

• 130g bag of Nature’s Pick Bistro Salad
• 1 Nature’s Pick Pomegranate, seeds and pith removed. Keep the seeds and the juice!
• 200g block of Emporium Greek Feta Cheese, crumbled
• 1 pack of Nature’s Pick Baby Cucumbers, sliced into thin coins
• 4 large Nature’s Pick Spring Onions, white and green part thinly sliced
• The Pantry Walnut Halves (or use toasted flaked or blanched almonds if you prefer)

Method

1. Arrange the leaves in a large salad bowl or platter.
2. Sprinkle over the other ingredients and toss. 
3. Drizzle with extra virgin olive oil and squeeze of lime juice. If you have any juice from the pomegranate, you can use that instead. Like most salads, this one is best assembled close to serving!

West Cork Buffalo Mozzarella Pearls with Irish Rainbow Tomatoes and Shaved Courgette

Ingredients 

• 3 large Nature’s Pick Courgettes, sliced lengthways with a vegetable peeler and added to bowl with a pinch of sea salt and some lemon juice
• 1 pack Egan’s Irish Cherry Rainbow Mix Tomatoes, cut in half
• 1 tub Specially Selected West Cork Irish Mozzarella Pearls, drained and halved
• 3 sprigs Nature’s Pick Fresh Mint Leaves, rolled and sliced (or torn!)
• 3 sprigs Nature’s Pick Fresh Basil, leaves rolled and sliced (or torn!)
• Pinch of Ready, Set…Cook! Dried Crushed Chili Flakes (optional)
• 100g Cooked Cucina Fusilli Pasta (optional)
• Solesta Extra Virgin Olive Oil and squeeze of lemon juice to finish when assembled

Method 

1. Assemble all the ingredients in a large bowl and gentle tumble together with two spoons.
2. An optional step is to add in some cold Cucina Fusilli Pasta (plain or wholewheat).
