Sticky Chicken

Ingredients 

  • 291g pack Butcher’s Selection Irish 2 Pack Chicken Breasts €3.89
  • 20ml Specially Selected Balsamic Vinegar €2.99
  • ½ tsp Stonemill Chilli Powder €0.62
  • 20ml Asia Specialities Dark Soy Sauce €0.89
  • 20ml Grandessa 100% Pure Squeezy Honey €1.69
  • Nature’s Pick Fresh Salad Leaves €1.29

Method 

  1. Cut the chicken breasts into large chunks.
  2. In a bowl, mix the vinegar, chilli powder, soy sauce and honey.
  3. Add the chunks of chicken – mix well and allow to marinate in the fridge for at least 30 mins.
  4. Heat the air fryer to 180°C.
  5. Take the chicken out of the marinade and put onto the fry tray.
  6. Close the fry basket.
  7. Cook for 8 mins.
  8. Heat the remaining marinade in a pan or in the microwave.
  9. Serve the chicken glazed with the hot marinade alongside some fresh salad leaves.

Baked Sweet Potatoes with Chickpeas, Spinach and Houmous Yoghurt

Ingredients 

  • 4 x Nature’s Pick Loose Sweet Potatoes €0.79
  • 1 x 400g tin Four Seasons Chickpeas €0.42
  • 70g Nature’s Pick Baby Spinach Leaves €1.25
  • 1 small Nature’s Pick Red Onion €0.79
  • 1 large Clove Nature’s Pick Garlic €0.99
  • Juice of 1 Nature’s Pick Lemon €0.99
  • 30ml Solesta Cold Pressed Virgin Rapeseed Oil €2.79
  • 40g Brooklea Authentic Greek Yoghurt €1.79
  • 40g The Deli Houmous €0.79
  • 1 tsp Stonemill Paprika €0.47
  • 1 x Pomegranate €0.99
  • 20g Foodie Market 4 Seed Mix €1.09
  • Ready, Set…Cook! Sea Salt and Black Pepper €0.99

Method

  1. Pre-heat the air fryer to 200°C.
  2. Wash the potatoes then prick with a fork and cook in the air fryer for about 45 minutes until tender when squeezed.
  3. Mix the yoghurt, houmous and paprika in a bowl and put to one side.
  4. Cut the onion in half and peel then chop finely.
  5. Peel the garlic and chop finely. Sauté the onion in half the oil in a large frying pan for a couple of mins on a low heat.
  6. Add the garlic and cook for another minute.
  7. Drain the chickpeas and add to the pan and heat through, mashing the chickpeas a bit with a masher as you cook, then add the lemon juice and the rest of the oil.
  8. Add the spinach leaves and cook until slightly wilted, seasoning with salt and pepper.
  9. Cut the cooked sweet potatoes in half.
  10. Divide the chickpea mixture between them and spoon over the houmous yoghurt.
  11. Sprinkle over the seeds and pomegranate and serve.

Cajun Salmon

Ingredients

  • 1 x 240g pack Skellig Bay Fresh Salmon Fillets €4.49
  • 1 x Nature’s Pick Lime €0.69
  • 2 x tsp Ready, Set…Cook! Cajun Seasoning €0.75
  • 1 x 250g pack Worldwide Food Basmati Rice €0.65
  • 1 x Nature’s Pick Green Pepper €1.59
  • 5g Nature’s Pick Fresh Coriander €0.99

Method

  1. Juice half the lime and brush over the salmon fillets.
  2. Sprinkle 1 x tsp Cajun seasoning over each salmon fillet.
  3. Chop the pepper into medium size chunks.
  4. Heat the air fryer to 180°C.
  5. Put the salmon fillets on the fry tray and the pepper chunks around.
  6. Close the fry basket.
  7. Cook for 8 mins.
  8. Microwave the rice for 2 mins – as directions on the pack.
  9. Serve the salmon on a bed of rice with the peppers – with a lime wedge and some fresh chopped coriander.
