Recreate ALDI ambassador John Relihan’s steak recipe at home!

Temperatures are soaring and that can only mean one thing: it’s time to fire up the BBQ!

This summer, ALDI has teamed up with chef, BBQ extraordinaire and fire cooking expert, John Relihan to find Ireland’s Hottest Grill Master and bring you smoking hot recipes you can recreate in your own backyard! 

John’s Dry Aged Sirloin Steak is a show-stopping addition to any summer BBQ. It’s a sure-fire winner and the ideal recipe to add to your repertoire this summer. John Relihan’s Dry Aged Sirloin Steak Recipe

Ingredients

  • 1 Bord Bia Quality Assured, 100% Irish 30 Day Matured Sirloin Steak 
  • 1 Tbsp. Specially Selected Cold Pressed Irish Rapeseed Oil
  • 3 Tbsp. Kilkeely Butter 
  • Pinch Stonemill Sea Salt
  • Pinch Stonemill Black Pepper

Method

  1. Preheat the grill and make sure one side of the grill is hot and one side of the grill a medium heat.  
  2. Rub the sirloin steak with rapeseed oil and season with sea salt. 
  3. Place the steak on the hot side of the grill. Once the steak is seared on the first side turn the steak using a kitchen tong.
  4. Turn the steak and baste lightly with butter. This will ensure that your steak will be juicy and moist on all sides.
  5. Using a temperature probe, insert it into the middle of the meat. For a sirloin steak, the best results are when you cook the steak to Medium rare (55-57 degrees Celsius), once it reaches the temperature, leave rest for 3 minutes. Butter again as it rests. Resting the meat allows the juices to be reabsorbed into the fibres of the meat. If you skip resting, you will lose more flavourful juices when the meat is cut.
  6. Place the sirloin steak on a chopping board, using a sharp kitchen knife, slice the steak into a thickness of 10 cm slices.
