To celebrate Veganuary, ALDI has prepared asimplevegan recipe for you to try at home. It’s the perfect winter warmer!

Sri Lankan Style Curried Cauliflower

(Serves 4)


  • 1 x Tin of Four Seasons Chickpeas in Water €0.45 (400g, Drained)
  • 1 x Red Chilli, Nature’s Pick Mixed Chillies €0.49 (50g)
  • 1 x Lemon 
  • 1 x 400g Cucina Chopped Tinned Tomatoes €0.49 (400g)
  • 100g Baby Spinach Leaves 
  • 1 x 10g piece peeled Nature’s Pick Fresh Ginger €0.55 (125g)
  • 1 tsp Ready, Set…Cook! Paprika €0.55 (40g)
  • 1 tsp Ready, Set…Cook! Ground Cumin €0.65 (40g)
  • 3 x Nature’s Pick Garlic Cloves €0.79 (4 Pack)

  1. Peel the onions, halve, and thinly slice.
  2. Peel and mince the garlic. Grate or finely chop the ginger.
  3. Finely chop the chilli along with the seeds.
  4. In a wok, sauté the onions in the oil for 4 minutes on a low heat. 
  5. Add the nuts and cook for another minute.
  6. Add the chilli, garlic, ginger, ground cumin, paprika and curry powder.
  7. Cook on a low heat for a minute, stirring as you cook. Then, add the coconut milk and the chopped tomatoes. 
  8. Grate the lemon and juice, then add the rind and juice to the curry sauce.
  9. Bring the sauce to the boil, season with some salt and plenty of black pepper.
  10. Cut the cauliflower into eights and add to the sauce.
  11. Drain the chickpeas and add to the wok. Gently cook for about 25 minutes until the cauliflower is just cooked and the sauce has thickened. 
  12. Then add the spinach leaves, stir through and cook for another 5 minutes.
  13. Serve alongside some basmati rice.
