Lime & Ginger Salmon with Stir Fried Vegetables

Ingredients

  • 2 tbsp Specially Selected Medium Dry Sherry
  • 1 tsp Dark Brown Sugar The Pantry
  • 2 tsp Dark Soy Sauce Asia Specialties
  • Juice from 2 Nature’s pick Limes
  • Thumb-sized piece of Nature’s pick Ginger, peeled and grated
  • 2 Nature’s pick Garlic Cloves, crushed
  • 4 Skellig Bay Salmon Fillets
  • 200ml Chicken Stock (made with ½ Quixo Cube)
  • 280g Nature’s pick Baby Corn, halved
  • 220g Specially Selected Green Beans, trimmed
  • 100g Healthy Horizon’s Kale, washed and patted dry
  • 2 Scallions, trimmed and thinly sliced

Method

  1. Mix the sherry, brown sugar, soy sauce, lime juice, ginger and garlic.
  2. Pour this over the salmon fillets and leave to stand for approx. 10 minutes.
  3. Heat the grill to high, remove the salmon from the marinade (reserve) and grill for 5 minutes on each side.
  4. Meanwhile, heat a large wok or frying pan, adding the marinade and chicken stock.
  5. Add the baby corn and green beans and cook for approx. 5 minutes.
  6. Add the kale and cook for a further 3 minutes.
  7. Serve the cooked salmon on top of the vegetables.
  8. Spoon over a little cooking sauce from the pan and sprinkle with chopped scallions.
